That seems odd to me. It doesn't sound right in the context.

I would say:

Ecco ciò che vedo, provo e di cui sento l'odore.

Provare means to feel when referred to an emotion/feeling. Whereas sentire is closer to the idea of perceiving something [and also means to hear and to smell].

Visto è la forma corrente. Veduto è letterario e abbastanza desueto.

Per quale ragione è necessario scrivere "si può essere convinti" (plurale)? Ho pensato che "si può esssere..." fosse una costruzione indefinita.

Perché si = noi impersonale [anche se si coniuga alla terza persona singolare].

Nel linguaggio comune infatti spesso si usa si invece di noi anche quando il soggetto non è per niente impersonale. Per esempio: io e Luca si va invece di io e Luca andiamo.

Si dice: "i libri che ho comprato ieri", con il participio che non concorda.

"Il quale/la quale/i quali/le quali" si usa solo per evitare ambiguità: per esempio nella frase:"Ho parlato con la sorella di Antonio che abita vicino a me", non si capisce se il "che" si riferisce a "la sorella" o ad "Antonio". In questi casi si può usare o "il quale", se mi riferisco ad Antonio, oppure "la quale" se mi riferisco alla sorella: "Ho parlato con la sorella di Antonio la quale abita vicino a me": chi abita vicino a me è senza dubbi la sorella. Se invece dico: "Ho parlato con la sorella di Antonio il quale abita vicino a me", allora è Antonio che abita vicino a me.

Voglio solo far notare che i libri che ho comprati ieri era corretto in italiano arcaico. E neanche tanto se si pensa a Primo Levi.

In effetti l'uso, riguardo a certi aspetti della lingua, può variare. C'è chi dice per esempio "Ho comprata una bicicletta", "Mi hai vista?" (se il soggetto è femminile"), oppure "Ci hai sentiti/e?". La maggior parte della gente, però, dice "ho comprato una bicicletta", "mi hai visto?" (anche se il soggetto è femminile) e "ci hai sentito?".
